I've made this recipe for years now and every single person that has ever tried these has loved them. Even people that don't like lemon!

For the crust:
- 1 stick of unsalted butter
- ½ stick of salted butter
- ½ cup of confectionery sugar
- 1 ½ cups of flour
For the filling:
- 4 eggs
- 1 ½ cups granulated sugar
- ¼ cup of flour
- ¾ - 1 cup of freshly squeezed lemon juice (about 4-5 juicy lemons)
- 2 tablespoons of lemon zest (I just zested 3 lemons)
- 1 teaspoon of baking powder
Line a 9x13inch pan with enough aluminum foil so that it comes over the edge of the pan.
In a large bowl, combine the 1 ½ cups of flour with ½ cup of confectionery sugar. Cut up the butter into ½ inch pieces and combine with the dry ingredients. Mix the concoction with your hands until it reaches a crumb-like texture.
Press the mixture evenly into the pan and bake for 15-20 minutes, or until golden brown.
While the crust is baking, in a large bowl, beat the 4 eggs with the 1 ½ cups of granulated sugar until it reaches a pale yellow color. Add the remaining ingredients and mix.
Once your crust is finished baking and while it is still warm, pour the lemon mixture onto the crust. Remove the lemon squares after about 20-25 minutes, and allow them to cool. Remove them by pulling up the aluminum foil and sift some powdered sugar before cutting.

NOTE: The recipe calls for 1 ½ stick of unsalted butter for the crust and a pinch of salt for the filling, but I didn't have more unsalted butter the last time I made them - so I used ½ a stick of salted butter and skipped the pinch of salt. Either way, works great! :D
