Non-Diary Sugar-free Rice Pudding [a way of finishing your unfinished grapes!]

[All the sugar is in the natural ingredients I used!] :D

So I completely made up this recipe as I went along, trying to use up my grapes which weren’t as fresh anymore. The measurements aren’t very exact because I was trying to make the best of what I had with whatever ingredients I had at hand.


Ingredients:
  • 1 ½ cups of green grapes (red might work as well, I just haven’t tried it…so if you do, let me know how it comes out!)
  • ¾ cups of hazelnut milk (you might be able to use rice, almond or soy – though I think soy milk might leave a diff taste)
  • 1 teaspoon of ground cinnamon
  • 1 cup of cooked white rice
  • Handful of chopped raisins and/or dried cranberries


Start by blending grapes and hazelnut milk in a blender or food processor. You don’t need to make it very fine – you can leave some pieces of grape. 

Place the mixture into a medium sized pot and bring it to a boil, occasionally stirring. Put in your cinnamon and let the mixture boil for another 10 minutes or so (so the consistency gets a bit thicker).

Lastly, put in your rice and dried fruit and stir!

You can add more or less cinnamon and fruit – according to taste. Enjoy!



I improved this recipe by realizing some of my mistakes while going through the original process – so you won’t have to go through those pitfalls! To let you guys know what I did – I started by boiling grapes in hazelnut milk, thinking that if I just mash warm grapes, they will fall apart – which was NOT the case. I had to use to blender - so you can skip that initial step and just start with the blender! :D

Ways of improving for next time (things to consider while making your own batch!):
- Adding clove and/or nutmeg into the mix (more of a gingerbread-y taste!)
- Using sticky rice (it might make the consistency a bit thicker – more like pudding)
